Unicorn Blondie Brownies

This fun twist on blondie brownies is a fun recipe to make with the kids. You can even incorporate a color blending lesson into this exciting recipe.

Equipment

Ingredients

  • 2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup unsalted butter melted
  • 1 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 tbsp vanilla
  • 1/2 cup Funfetti white chocolate chips
  • food coloring
  • rainbow or unicorn sprinkles

Instructions

  • Preheat the oven to 350 degrees
  • Grease an 8x8 baking pan or line with parchment paper
  • Whisk together the flour, baking soda, baking powder, and salt in a large mixing bowl
    Whisk together dry ingredients in a bowl
  • Combine the brown sugar, eggs, melted butter, and vanilla with the hand mixer. Do not overmix

  • Pour the wet ingredients into the bowl with the dry ingredients and mix
    Mix all ingredients with hand mixer
  • Remove 1/3 cup of batter for each color you are using. Place each portion into an invidivual smaller bowl.
  • Drop 3-4 drops of food coloring into each of the smaller bowls and mix with a fork until evenly combined
  • Distribute the confetti chips into each bowl of batter.
  • Spoon each of the colored batter portions into the baking dish, combining the colors and plain batter in a pattern
  • Swirl the colors together until they are combined to create a rainbow or unicorn effect
  • Top with sprinkles
  • Bake for approximately 25 minutes or until cooked through

Notes

Tips:
  • Add more food coloring than you think you will need as the colors will lighten after baking. 
  • You can use neon or pastel colors to achieve the unicorn look.  Consider using primary colors for a more bold, playful blondie.
